Working Principle
The freeze-drying process consists of three stages: pre-freezing, primary drying (sublimation), and secondary drying (desorption). First, the material is rapidly frozen in a cold trap to a temperature below its eutectic point, causing free water to completely freeze into ice crystals. Subsequently, the vacuum pump system reduces the system pressure to below the triple point of water, and the shelf is gradually heated, allowing the ice crystals to sublimate directly into water vapor, which is captured by the cold trap (with temperatures as low as -50°C). Finally, during the heating process, bound water is further removed, resulting in a loose, porous freeze-dried product with extremely low moisture content (typically below 1%).
